dirty ethel rackham Posted July 26, 2016 Posted July 26, 2016 Dd16 is in 4-H and it is County Fair week. She made sponge cake (basically angel food cake only the batter has egg yolks.) It is currently cooling upside down. Once she takes it out of the pan (fully cooled), how should she store it so that it has the right taste and texture? Judging is late tomorrow afternoon. Quote
Melissa in Australia Posted July 26, 2016 Posted July 26, 2016 (edited) I usually only leave the sponge in the tin for 5 minutes then turn onto a covered rack. Is the sponge to be judged unfilled? What we do is place both layers onto a plate on top of each other. Wait until completely cool and place the whole thing into a large freezer bag. Not glad wrap as that sort of clings to the cake and destroys the finish. Did and I enter lots of baking into our country fair. This is how it is specified to be taken here. dirty ethel rackham Posted July 27, 2016 Author Posted July 27, 2016 This type of sponge cake was to be made in a tube pan so it was treated like angel food cake (inverted to completely cool before removing.). I did read that it should be tightly sealed in a cake carrier. The presentation had to be a plain 1/4 cake on a paper plate in a zip lock bag, per fair rules. The next morning after we cut it, we realized that it was slightly under baked. It fell slightly and had a slightly gummy texture. She was really too tired to try again and was under time constraints since she had a babysitting job before she had to go to fair. She got a blue ribbon (met project standards) but didn't fare better than that, which is what she expected. Last two years, she was grand champion. She isn't really disappointed, though. She won Grand Champion for her drawing (shadow portrait using colored pencil on black background), Reserve Grand Champion for clay original for a coil pot pitcher that looked like it was thrown on a wheel, Grand Champion for Food Demonstration, and a class Champion for fiber (visual arts),and our club was chose as State Delegate for Club Intercultural.
