ktgrok Posted July 13, 2016 Posted July 13, 2016 I cooked 15 bean soup in the instant pot. It's done, and I just realized I forgot to put in the smoked sausage I had bought for it, lol. Do I chop it up, saute it on the stove top, and add it in? Put it in and hit the saute function (soup is a bit watery anyway) and hope that heats it through and melds the flavors? Just forget about it and serve it as vegetarian soup? Quote
regentrude Posted July 13, 2016 Posted July 13, 2016 (edited) I would prefer vegetarian soup, but if you want to add sausage, I would cook it in a pan. Adding it to soup will merely boil the sausage at boiling temp of water, and the Maillard reaction which creates the delicious browning will not take place since that requires higher temps. Meat sauteed at high temperature is so much tastier than boiled meat. Edited July 13, 2016 by regentrude 2 Quote
Lecka Posted July 13, 2016 Posted July 13, 2016 (edited) I would also heat it separately. It will not taste good if you add it to a watery pot. You could add some more seasonings too if you want to skip the sausage. I just added a flavored vinegar to a bean soup recently, and it was good. It was new to me, I don't remember doing it before. MotherGoose Posted July 13, 2016 Posted July 13, 2016 So I ordered an instant pot yesterday, and I'm wondering, ktgrot, if you'd remembered to put in the meat at the beginning would it have been fine? Would you throw in raw hamburger meat, for example (I use grass fed, usually, so grease is not an issue), with other ingredients to make chili? Or does this fabulous instant pot have a saute feature like you mentioned and I can use that to saute meat first? Quote

I meant to saute the sausage in the pot, then add the rest and pressure cook it. But I got so excited about not having to soak the beans I put them in first. I blame these early pregnancy hormones. Or that I'm getting old and senile. Quote
zoobie Posted July 13, 2016 Posted July 13, 2016 Taste it and see if it needs it. If it's for supper, you can throw it in and let it slow cook. Quote
KatieJ Posted July 13, 2016 Posted July 13, 2016 I am curious, didn't you just order the IP yesterday on the Amazon sale? How are you cooking in it today? Do you live in one of those 2 hour delivery areas? Quote
ktgrok Posted July 13, 2016 Author Posted July 13, 2016 Yup, I'm near a distribution center, so can get free same day shipping on stuff over a certain price point. So it got here last night about 8pm. Usually it doesn't even take that long but they were slammed I'm sure. I also can get Amazon Now which is the 2 hour delivery, but only on a limited number of items. I may or may not have used it to get ice cream in the past :) 1 Quote
SparklyUnicorn Posted July 13, 2016 Posted July 13, 2016 Is this like a kielbasa type sausage? If so you can just chop it up and add it and heat it up. If it's an uncooked sausage I'd cook it first. Quote
ktgrok Posted July 13, 2016 Author Posted July 13, 2016 It's a cooked sausage. I diced it up a bit smaller than usual, sautéed it on the stove for extra flavor, and then dumped it in the pot. I've got the pot off, and am letting it cool and hoping the flavors meld a bit as it cools and sits in the fridge. It tastes fine either way. 1 Quote
