Let me start off by saying I've never tested positive for wheat/gluten allergy. 

 

Recently I went on the Paleo diet.  My physical therapist suggested I "clean up my diet"  since the inflammation was being stubborn about going away.  My family physician also recommended a change and suggested the Paleo diet.  I guess the biggest changes for me were no cereal grains and no dairy.  My diet was already pretty junk free (boxed convenience food free, soda free, artificial sweetner free, etc).  So, went on Paleo not sure what to expect.  I usually grind my own wheat and have quite a bit here, so a couple days ago I made banana muffins for the kids.  I figured  a homemade banana muffin for dessert after dinner wouldn't hurt. 

 

Fast forward to my question.  I felt awful!  I had a headache.  My nose was all clogged.  I had brain fog.  My tummy was "rumbly."  Wheat obviously is not my friend.  What is going on?

You can be gluten intolerant and not test positive for anything. In our house we have two with celiac, one with IBS with a gluten trigger, one with autism who reacts to gluten and the last with an autoimmune disease/inflamation which is triggered by gluten. The whole house is gf.  Both my pediatric GI and adult GI have told us that there are lots of people out there who can't tolerate gluten but will never have a positive test for anything gluten related. The symptoms you describe are almost exactly what happens to me when I eat gluten (I am not one of the celiacs). I am a much happier/heathier person when I avoid gluten.

Thanks for the info.  I am amazed by how much better I feel off dairy and gluten.  I did have some yogurt once in the last month.  The yogurt was organic, gluten free.   I felt bloated but not miserable and it resolved quickly.  I really think the gluten might be a trigger for me.  My pain levels are much less now too.  Something is going on for the better

Try it several more times to be sure that's the reason.  I'm allergic to wheat, so 90% of the time all the food in the house is gluten free. DH will go out to lunch with co-workers and come home groaning hours later.  Wheat hangover, he calls it. It is much worse for him when he eats whole wheat.

 

Whatever you do, since you have some mild allergy symptoms, DO NOT eat whole wheat anything while you're trying a new antibiotic.  That's how I took my sometime-intolerance into full blown allergy that breaks me out in hives and closes up my throat.
