frugalmamatx Posted June 30, 2016 Posted June 30, 2016 Spinning off the Dessert thread - what are you planning to eat on the 4th? Not 100% sure yet here. No bbq grill to cook on, so I'm thinking hotdogs in the oven and baked potatoes to go with. Not sure what else to do honestly! Mom always made fried chicken when I was little, but she never taught me how to make it :( Quote
alisoncooks Posted June 30, 2016 Posted June 30, 2016 I'm stumped! One kid wants hamburgers and the fixings. Other kid wants BBQ (the shredded pork kind, Eastern NC style). I'm thinking I'll send DH to get a "tailgate pack" from the local BBQ place. Sounds good to me -- and no cooking required! 1 Quote
The Girls' Mom Posted June 30, 2016 Posted June 30, 2016 Our party menu actually doesn't involve a grill at all. I make pork ribs with a Texas style rub, with some smoked sea salt thrown on. Cooked low and slow in the oven. I also do pulled pork (can be done in the crock pot) with BBQ sauce on the side. And in the roaster I do boneless chicken thighs with a McCormick's Maple BBQ seasoning. (We'll be feeding 125+ people) Sides are usually things like baked beans, cole slaw, potato salad, etc. Quote
Ethel Mertz Posted June 30, 2016 Posted June 30, 2016 I'm thinking grilled swordfish, veggie kabobs, a pasta salad, and watermelon. If we can still get strawberries from our local farm tomorrow, we'll have strawberry shortcake. Quote
LarlaB Posted July 1, 2016 Posted July 1, 2016 We are hosting 10 and keeping it really simple- pulled pork in slow cooker, 5 bean casserole, mac & cheese, 3-4 salads (Tabbouleh, Greek salad & kale salad) chips, watermelon, brownies sundae bar. Its still work but loads easier than some other alternatives. :) Quote
Zinnia Posted July 1, 2016 Posted July 1, 2016 We are camping, and I just figured out the week's menu. We'll be having hamburgers, baked beans, watermelon, and chips. I'm a little jealous of the oven meals. Our house is not well insulated from room to room, and we don't use the oven from April to October because it gets so hot in here. I start missing casseroles and oven meals about this time of year. Quote
