ILiveInFlipFlops Posted June 29, 2016 Posted June 29, 2016 (edited) I need 7-8 potatoes for a soup/stew recipe. I have some potatoes that are pretty old, but that were kept in a dark, cool spot, so they're technically still edible. Three look pretty good in spite of a little bit of sprouting. The others aren't sprouting, but they have a tiny bit of mold on some breaks in the skin and they're a little soft. There's not a ton of mold anywhere, and I could easily cut away the small bits I see, but they're definitely not the freshest spuds. Still, they're going to be boiled in broth with shrimp and sausage and other veggies, so they're not going to be the main flavor. WWYD? Do you think these are safe to eat? Closeacademy Posted June 29, 2016 Posted June 29, 2016 I'd just break off the sprouts and cut around the bad spots. I do that all the time. 3 Quote
MEmama Posted June 29, 2016 Posted June 29, 2016 Souping them sounds like the perfect use. I would definitely eat them. 1 Quote
VaKim Posted June 29, 2016 Posted June 29, 2016 Yep. Just cut off the bad parts. We do it all the time. 1 Quote
regentrude Posted June 29, 2016 Posted June 29, 2016 Sure. That's what soup is for - the rescue for the not-so-nice veggies that still have usable parts 1 Quote
ILiveInFlipFlops Posted June 30, 2016 Author Posted June 30, 2016 Thanks everyone. I did use them, and they were fine, although in my zeal to get them used up, I accidentally added way too many! But the stew was great and the potatoes are finished, which is good because in about a week, I'm going to be able to start harvesting the ones in my garden :hurray: Thanks for the help! 4 Quote
