Guess who made a vat of hummus today? I was trying my vitamix hummus recipe, but I used dried beans. It's good. I little bland for me, but I'm taking it to a potluck. I wanted to add more cumin and an eensy pinch of cayenne, but I resisted the urge. I love that I can now buy sesame seeds in bulk instead of fussing with tahini. redsquirrel Posted May 19, 2016 Posted May 19, 2016 Too thick seems to be the issue. You can thin it, as you blend, with vegetable stock, or even water. I usually use a mix of lemon juice and stock to thin my hummus out. I usually blend my tahini with my garlic, salt, lemon juice. It makes a sort of a fluffy paste. Then I thin that with some veg stock until it is like... salad dressing? Thick but not a paste. Then I add my chickpeas and blend. I add more salt and lemon juice to taste, using stock if it seems too thick. 1 Quote
KungFuPanda Posted May 19, 2016 Author Posted May 19, 2016 Too thick seems to be the issue. That's an easy fix. Just add a little water or cooikng liquid from the chickpeas. Really, the amount of water you'd need to thin it out is so little it won't change the taste. 1 Quote
sheryl Posted May 21, 2016 Posted May 21, 2016 wow, how timely. my brand new vitamix arrived yesterday, Thursday! just a couple of hours ago I made my first recipe....hummus. however, I made mine with cooked lentils. I did buy tahini paste but it's so expensive. the recipe called for 1/2 c. which is 1/3 of the jar. I thought about grinding sesame seeds to make the tahini but thought the texture would be too dry. so, when you grind sesame does it release natural oils? as the oil found on the top of the jar? 1 Quote
