We bake bread all the time but haven't hit on that "this is perfect" loaf yet. The challenge - we can't use rice, potato or corn flours. The flours we keep on hand - almond, millet, oat, coconut, sorghum and teff with arrowroot and tapioca for starches. I have only tried a couple different bread recipes though. It tastes pretty good and the recipe produces good consistent results which is huge for me with GF baking. ETA: This bread has the flours you mentioned plus flax meal. It does have a high percentage of bean flour though, so don't eat it before an important event unless you already eat beans daily. Until you're used to it there are some tremendously gassy results. Especially don't leave it on the counter cooling for your dog to steal. I know, it sounds crazy, but it is awesome!! Yes, I make it weekly. A double batch. It actually uses the whole egg, you just beat them separately. We get the big Udis loaf at Costco but it is expensive! With 5 people eating we go through a loaf in a day. I would love to see the recipe with cream cheese.
