Do you have a GF bread recipe you love? (with a challenge)

We've been GF for a very long time but the one thing that still eludes me is a good sandwich bread recipe. We bake bread all the time but haven't hit on that "this is perfect" loaf yet.   

The challenge - we can't use rice, potato or corn flours.

 

The flours we keep on hand - almond, millet, oat, coconut, sorghum and teff with arrowroot and tapioca for starches.

 

Hit me with your favorites :)

This is the one I make.  I have only tried a couple different bread recipes though.  It tastes pretty good and the recipe produces good consistent results which is huge for me with GF baking.

 

ETA: This bread has the flours you mentioned plus flax meal. Hopefully that isn't a deal killer.  =)

I think Pamela's bread mix is the best.  It does have a high percentage of bean flour though, so don't eat it before an important event unless you already eat beans daily.  Until you're used to it there are some tremendously gassy results.

 

Especially don't leave it on the counter cooling for your dog to steal.  He'll eat the whole loaf and stink you out of your own house for the next several days.

Is that for real!? Cream cheese and egg white :). Do you make this? Sounds so unusual but worth a try!

I know, it sounds crazy, but it is awesome!!  Yes, I make it weekly.  A double batch.  It actually uses the whole egg, you just beat them separately.

I make it weekly.  I use cottage cheese and  cream of tartar instead of cream cheese and the husks.  I can post my tried & true recipe if you like.

We love Pamela's - may stick with that for fresh baked. We get the big Udis loaf at Costco but it is expensive! With 5 people eating we go through a loaf in a day.

 

I would love to see the recipe with cream cheese.

I'm going to try your recipe. I like how light it looks. So many if the gf breads are so heavy. How do you store the bread? Just a ziploc bag on the counter or do you refrigerate it?
