sheryl Posted May 8, 2016 Posted May 8, 2016 (edited) Well, I try to get fish on the table as often as possible (black/cod, atlantic sockeye salmon, Carolina shrimp). I like it and dh and dd not so much. Tonight was cod night. I used to buy it at TJ's until they stopped carrying it. I went back to cod and just found black cod at another grocery store! I thought I'd try it restaurant style. Please know I'm not a chef; this will be apparent soon. So, I wanted a coating on it. Normally I use panko and bake. Tonight I used cornmeal mixed with panko and seasoning. Into the oven it went to bake. We're at the table eating and the expressions of my dd and dh were those of anguish over having to eat the cod. They both could not stand it. I ate mine up. My mistake was baking when I should have fried it. I was trying to save the calories but perhaps that's not meant for this dish! LOL! MEmama Posted May 8, 2016 Posted May 8, 2016 I coat it first with flour, then dip it in egg, then in panko mixed with paprika and a touch of grated asiago cheese. Bake about 15 minutes I think? Maybe more, we like our fish done-done. The flour layer keeps the panko crispy. Sorry you had a dinner disaster but hey, at least you timed it right! I buy frozen now (still local) to avoid having to think about it. Technically they are still there, but at least they aren't wriggling all over my cutting board! 1 Quote
