What are some of your favorite panini recipes?

I just pulled out our old panini press, gave it a good scrub, and voila! Looks and cooks like new.

 

I'm ready to panini it up!

Today I did (vegan) ham, tomato, onion, cheese, and basil on sourdough. That's pretty much where the creativity ends for me. :)

 

Any fun ideas??

I'm vegetarian, but the kids and husband are vegan. I only cook vegan. 

 

I will most definitely be trying your panini combo. We love Granny Smiths.
