The choices of leftovers are taco-flavored quinoa, homemade pizza, stuffed garlic cheese breadsticks, fried catfish, cabbage/onions/potatoes in broth, and Easter eggs. Rye bread, lots of (drained) sauerkraut, and some baby Swiss, all heated in a frying pan until the cheese melts. And some cauliflower zapped in the microwave. With some grapefruit juice. I usually grill them on the indoor grilly thing. I like to make a ginger lime sourcream dressing mixed with pre shredded slaw and corn tortilla's but flour is good too. Fresh or pickled jalapeno's and red onion if you have it, cilantrol. Sometimes we just do cilantro, onions, fresh and/or pickled jalpeno's and salsa. 1 Quote

Can you tell me how you make/serve your shrimp tacos? I do them similarly. For fish tacos, I usually use something like Mahi Mahi, cod or haddock. Either bake or sautée until done. If I'm using a sauce, I like Frontera (idk what kind, it's in a green package), otherwise tomatillo salsa or just lemon. If shrimp, sautée quickly, either with or without sauce. I serve them in small tortillas with sautéed onions and peppers, grated cheese and avocado, and tomatoes for me. And salad on the side. Quick and simple. :) 1 Quote
foxbridgeacademy Posted March 28, 2016 Posted March 28, 2016 Rotisserie Chicken with some odd and end veggies (pea pods, broccoli, onions, zucchini, sweet peppers) stir fried in soy sauce and chinese spices. Takes like 5-7 minutes then toss in pre cooked Udon noodles(took about 10 minutes to cook) for about a minute. This is one of my cheap and easy meals. I use up veggies that will likely go bad, 1/2 a chicken (whole chicken $5) and 2 packages of Udon costs about $3. Feeds 4-5 of us. 1 Quote
