Desert Strawberry Posted November 21, 2015 Share Posted November 21, 2015 Not in the crock pot, but make ahead. Peel and chop potatoes. Today in oven with salt, pepper, and oil. Place cooked potatoes on bottom of greased casserole. Top with thinly sliced or finely chopped veggies. I like sauteed mushrooms, onions, bell peppers, zucchini. Next layer shredded cheese. Finally, pour beaten eggs over the top. Sprinkle a little more cheese if you like. Store in the fridge overnight. In the morning, bake at 325 until eggs are fully set. No problem. My oven is big enough that I should be able to do a hashbrown casserole and baked french toast at the same time.
