MEmama Posted October 19, 2015 Share Posted October 19, 2015 DS's cycling team is planning to tailgate at their next upcoming race and I'm looking for food ideas I can bring. It's probably going to be cold and I'm sure the kids will want warm and nourishing foods to keep their energy levels high. Someone has already offered to bring chili. Any other ideas? The baked potatoes can be wrapped in foil and placed hot into a cooler. In this case, a keep it warmer. It will keep those potatoes hot for a long, long time if the lid isn't left open! Fresh grilled cheese sandwiches on a camp stove with tomato or other soup. Black beans/dal/saag paneer/something else out of a crock pot and rice. Loaded sweet potatos. Get a nice crusty loaf of bread. Slice it open lengthwise and fill with roasted peppers, onions artichokes, tomatoes, etc. Add cheese...mozzarella or provolone. Wrap up in tinfoil and bake until warm and cheese is melted. Remove from oven, keep in tinfoil and wrap a clean dish towel around the outside. Transfer in a soft-sided cooler. Soooooo gooood.
