Laurel Posted August 24, 2015 Share Posted August 24, 2015 When I am on top of things (read:rarely), I like to have the following in the freezer: Muffins Baked oatmeal Egg cups (frittata/crustless quiche) I bake them all in silicone muffin cups so they are easy to pop out (esp. Important for egg cups, but also useful for baked oatmeal), and then I can put whatever combination in the toaster oven fir 5-10 minutes in the morning. I vary the kinds/add-ins of each so it doesn't get too boring. Leftover pancakes/waffles/French toast also freeze well and can be reheated in toaster oven. I don't like breakfast burritos, but I have made them occasionally in advance for dp and dss. It's super easy and convenient to wash and cut a bunch of fruit and keep in the fridge. Melon and pineapple would last all week, strawberries last several days. (Assuming they don't get gobbled up the first day. I know lots of fruitatarians that would go through it even more quickly that way.) You can pre-chop (and sauté) omelet veggies, as well as cook bacon or sausage and grate cheese to make omelets/scrambled eggs go faster. 3 Quote Link to comment Share on other sites More sharing options...

Idea from this: https://onceamonthmeals.com/recipes/ham-and-cheese-egg-rolls/ but with eggs. Or not. You can breakfast burrito them. I found the tortilla was too much bread for my DH and kids would eat the cheesy bread and not the filling if I used tortillas. Egg rolls are smaller and less wasteful for us, especially if my younger kids want their own. Big kids and DH eat 2. Egg mc muffin type sandwiches make up ahead well. You can freeze or refrigerate a few days. Baking the egg in a quarter sheet pan is the easiest way I've found. There's a Jeff Mauro recipe I use for the egg part. http://www.foodnetwork.com/recipes/jeff-mauro/sausage-and-egg-jeffmuffins.html Waffles and pancakes Mini egg frittatas I make homemade turkey "sausage" (just season ground turkey) and brown it up, separate it into two-portions, and parcook sweet potato cubes for sweet potato hash. Then I can throw it in the skillet, heat it up, and add four eggs. I do it in twos because I pretty much only go to the trouble if DH is eating it too. These quinoa breakfast cookies freeze well and everyone loves them. Put them in plastic baggies and labeled what flavor and prep instructions (basically add boiling water or microwave). Made and froze egg burritos with cheese, spinach, peppers and sweet potatoes, but you could do all sorts of flavor combos. We are gluten free. Favorites are chocolate muffins and a turkey sausage/parmesean muffin I'm working Saturdays all day and Sundays half day so I'm not sure I'll be making anything until Christmas. I'm teaching 8am-noon M/W and my oldest has 9am college classes on those days, so we'll be eating on different times those days. Tuesdays and Fridays I'll do something more extensive. Most of the time it's very simple: scrambled eggs and either bacon or sausage. Sometimes I add cheese, sometimes I mix some ham with the eggs instead of doing a separate meat. When I'm more ambitious, it might be: hash browns with bacon (or ham) & onion, scrambled eggs separately egg/bacon/cream cheese wraps quinoa patties (I made these yesterday, but I'm not sure DS will be as "into" them as he has been in the past) bagel sandwiches egg & cottage cheese muffins multigrain pancakes & sausage See a theme here? ;) DS only likes his eggs scrambled, and we're all about the salty breakfast meats. I try to remember to give fruit for a mid-morning snack (with or without cheese on the side). I thought afterwards that I could've used my grass fed whey protein powder too. It's not necessary though...I saw a bunch of recipes that don't call for powdered milk st all. I do like to pre-package my smoothie mixes so I just add water. I also like to make-ahead quiche, muffins, or put steel cut oats in the crockpot overnight. matrips Posted August 25, 2015 Author Share Posted August 25, 2015 I bought supplies and made up a bunch of breakfast sandwiches to freeze. couldn't find whole wheat english muffins, so trying on bagels instead. we will give them a try in the morning and hope they love them! my kids eat a ton for breakfast so anything I don't have to cook that am is a bonus. I know breakfast isn't long to make, but some days I just don't feel like making anything that requires any sort of effort at the stove. Tomorrow I'm trying out Ree's Blueberry Pancake Mini-Muffins. The kids think they look fun, and I just bought a new mini-muffin pan. Last weekend I made a huge batch of Fluffy French Toast for the freezer. When it starts getting cold outside, I like to make Overnight, Slow Cooker, Apple Cinnamon Steel Cut Oatmeal. My husband wants me to try making my own recipe of breakfast burritos by using frozen, unrisen rolls wrapped around scrambled eggs and sausage, and baked in the oven. Kind of like a breakfast calzone, he says. I also hard-boil eggs for the entire week and brown up sausage patties. You can't go wrong with just a good, plain biscuit. You can eat it with just butter, or jam, or throw a sausage patty on it, or even make up some gravy. (Sorry, I can't find a link to my biscuits.) We love No Bake Energy Bites. It's like a candy bar for breakfast. And last, but not least, I'll make huge batches of Quiver's Cinnamon Rolls a few times per year. Whatever happened to her? Only 2 of the 5 of us eat before lunch which isn’t something I get upset about. Some people just don’t eat in the morning. I’m one of those people. In the pantry: Bread Peanut butter A variety of boxed cereals A variety of poptarts Packaged fruit bars and granola bars A variety of nuts In the fridge : Milk (I buy it by the half gallon so littles can pour it themselves) A variety of yogurts A package of uncooked tortillas Eggs for kids old enough to scramble them (about age 10 and up) A package of smoothies from Costco in individual servings On the kitchen counter: A variety of fruits in season In the freezer: Frozen packaged waffles Frozen muffins, some homemade, some packaged all easily microwaveable Quote Link to comment Share on other sites More sharing options...

Pancakes (we'll wrap in stacks of 4, freeze) Muffins (wrap individually and freeze) Breakfast burritos (wrap in foil and freeze in freezer bags) Biscuit/Muffin Sandwiches (same as burritos) French Toast Casseroles Pigs in a blanket Things we make ahead and cook up for the following morning (but large batches): Egg casseroles Baked Oatmeal Things we make in bulk and keep in the fridge (haven't tested the freezing yet, but these could probably go in category #1) crustless-quiches/egg cups mini-quiches My early morning swimmers eat two breakfasts, a quick one out the door (usually a protein shake and a slice of Ezekiel bread), followed by a bigger breakfast on base at 0700.
