Very yummy. I sort of follow this and this. Then after pureeing, I throw in cloves, parm cheese, and other such stuff if I'm going to cook it up for spaghetti sauce. AMJ Posted December 31, 2016 Share Posted December 31, 2016 We get lemons from my in-laws. I juice them, but them in ice cube trays and freeze. Yup, that's what I started out doing. By freezing juice in ice cube trays it's easy to thaw out small quantities later, and you can still thaw out large quantities if you want to make lemonade. Now I zest the lemons before I juice them. I use a good microplane and get just the yellow zest, leaving quite enough pith remaining to support the lemon as I juice it. Last year I made sure to both zest and juice the lemons, and I freeze both the juice (in cubes) and the zest (in a small container or baggie, but don't pack the zest down). I can pull out the zest during the year and crumble off just the amount I want from the frozen block. It's almost as good as fresh zest! This year I tried making marmalade for the first time and got hooked. Upon reading up on jams and marmalades I discovered some instructions online for extracting pectin from the pith and seeds of the lemons, so now, after zesting and juicing, I'm bagging up the pith (rinds without the outer zest) and the seeds and popping them into the freezer, too, until I have time to try out extracting pectin. Sooner or later I will get a handle on this whole citrus crop harvest. I didn't want to pick all of my lemons at the same time, but they were all approaching ripe when a freeze threatened, so I picked them all. If it weren't for that threat I wouldn't have picked some of our calamansi and looked into them to find out what to do with them, so I don't regret that decision. It did leave me with a LOT of lemons to get processed before they dried out, though. MIL & FIL left the lemons on their tree, so if I want to make some lemon marmalade soon I can go ask for some of their lemons to get more rind. I need to try fans and water underneath and other ways to try to protect our fruit trees when it threatens to get down towards freezing. The thorns on pomegranate hedges scare me, so that's out. I am also contemplating passionfruit vines and an avocado tree.... I have been limiting how many I do at one time -- only enough to fill one ice cube tray. This only gets done once or twice a day -- gotta leave enough time for the cubes to freeze solid. DH has 3 pomegranates, the Wonderful variety, I believe. He says he thinks these have thorns, but not very many and they are no where near as nasty as our Meyer Lemon.
