I will bake tomorrow as Saturday is already busy, but was wondering if the extra day would hurt anything? :) Also I realized I don't have enough veg. oil. Can I melt shortening? umsami Posted April 17, 2014 Share Posted April 17, 2014 Yes, melt shortening over olive oil. Applesauce maybe for some of it in the carrot cake, but I wouldn't use all applesauce. But not olive oil…too strong. You could bake today and freeze, if you have the freezer space. Hold off on frosting your carrot cake, though. Mom in High Heels Posted April 18, 2014 Share Posted April 18, 2014 Freeze it and then frost it (still frozen!) Sat night. I'd use something other than shortening, but I have a huge aversion to it. I've used olive oil in cakes before and never had a problem. I think if I were making a yellow, white or pound cake, I wouldn't use olive oil, but otherwise, it's fine.
