You're going to find someone who's done it, sure, but in general I don't think I would. Maybe take the high school text and slow it down over two years, read sections aloud, discuss, flesh it out with videos. If it's really a bad fit, find something else entirely. You could go a different direction and let her research topics and people, so she's spending time, engaging and retaining. Have her start reading a newspaper and learning about voting and current events. She doesn't have to learn a ton of US history, but you want that thought process to mature so she understands how things connect to what is going on right now.
