ThisIsTheDay Posted July 21, 2013 Share Posted July 21, 2013 We just clean and slice a combination of green/red/yellow peppers (depending on price) and red or yellow onions (depending on what we have on hand. We drizzle with a bit of oil, and either put on double-layer, heavy duty foil to grill, or cook in a fry pan on very high heat. We put those on fajitas or bratwurst. I also make asparagus rafts by laying a number of spears side by side and running a skewer through at the top and bottom, which makes them easier to turn on the grill. Also, zucchini cut lengthwise. I usually brush with olive oil and sprinkle with a teeny bit of garlic salt. A friend was just telling me she's been grilling fresh peaches and drizzling them with aged balsamic vinegar.
