Now that I've recently had my 5th child, it is time to abandon the full, delicious breakfasts that I am known to make each day of every week... :( (This is really because I LOVE breakfast, not because my kids demand or expect it at all. They are happy with a bowl of cereal. ;) ) It is a source of stress every morning. So, besides cereal, I need ideas! We do not have a microwave (or toaster - but I think we ought to get one), and my oldest only recently turned 7, so they aren't capable of much. (Or are they??) They do help with cleanup, and they do enjoy helping prepping of the meals, but at breakfast this isn't really much of a help to *me*. I have talked to DH about making an extra something for me (he's a breakfast-lover) while he makes his to take to work (he leaves early), so this might work well for me getting something healthy first off. Baked oatmeal, boiled eggs, casserole that can be reheated, freeze a bunch of breakfast burritos, make French toast the night before? Would anything like that work? Jennifer in MI Posted July 4, 2013 Share Posted July 4, 2013 For me, it was just as easy to scramble up some eggs as it was to pour cereal for three hungry pre-schoolers/toddlers. And, it kept them full MUCH longer. I think your 7 yo could be in charge of making toast. And, I might even freeze up some sausages to heat up in the morning. That keeps your prep work to a minimum and yet will fill them up a lot longer. Or, what about peanut butter and jelly sandwiches? That's my dd's current breakfast fave!!! MomOfOneFunOne Posted July 4, 2013 Share Posted July 4, 2013 AMDG We like to put a single serving of oatmeal into a bowl, cover with (almond) milk, cover, refrigerate. In the morning we pour into a little pot, warm, and serve ourselves. 7 year old can definitely do both the prep and heating. I imagine younger can, too. We use that same little pot to warm frozen fruit to serve on top of a big dollop of gk yogurt and then sprinkle with granola. We love to have left over chili for breakfast!! I take my breakfast to work and eat it there, so I like to have things ready to go and fast. I make my yogurt parfaits on Sunday night, so they're ready for the whole week. But we also often don't eat breakfast food for breakfast. As someone else stated, peanut butter and jelly is my husband's favorite. Kitchen sink soup is another thing. I often eat refried beans, cheese and grilled tomatoes for breakfast. (the beans from having lived in Latin America, the grilled tomato from having lived in Australia). Brits eat beans on bread but that sounds gross to me. I don't eat wheat or corn so that lets most tortillas out. Chinese people eat congee, which is basically rice cooked with lots of water into a porridge. You can add milk, fruit or even other things to it, like meat or veggies. Here is a recipe to get started, but you can use the grains, dried fruit, additions, etc that you like. You can also buy it already made; Bob's Red Mill brand is good too, though I prefer mixing up my own. http://www.bonappetit.com/recipes/2012/07/homemade-muesli I eat this almost every day. I pour my portion into a bowl and mix with kefir or yogurt, then let it sit either overnight (in the fridge in hot weather) or for at least 30 minutes on the counter.
