Danestress Posted June 1, 2013 Share Posted June 1, 2013 I would love some new ideas! We are renting a house at the beach for a week this summer in July. It will be HOT. I want to get away from the same old boring things I always make - take a vacation from our usual food I guess. So what do you love to make in the summer? Jane in NC Posted June 1, 2013 Share Posted June 1, 2013 We love fish and veg on the grill in the summer. Make extra veggies to include on sandwiches the next day. Summer fare here also includes frittatas (easy and good cold), pasta salads, tabouleh, quinoa salads, etc. I like adding chick peas to tabouleh or a veg/quinoa salad to give it some added protein. Lisbeth Posted June 1, 2013 Share Posted June 1, 2013 Vegetarian sandwiches can be light and cold. I like avocado with tons of greenery, sprouts, tomatoes, etc. Dishes that contain cucumber. Assorted cheese and baguettes, grapes and strawberries - cocktail dinner. Grill up a mess of meat and veg one night and use the leftovers as lunch or dinners. In the past, I left thinking that if I just remember the 5 ingredients, I could package these meals at home. Last week I left feeling very glad that I didn't have to shop for or prep the 10-15 things that went into these recipes. I spent 90 minutes there last week and came home with 8 dinners. I didn't have to shop for them and my clean up at each meal is minimal because there is no prep mess. It's not cheaper than homemade, but its cheaper than McDonalds and you get real food that's outside of your normal recipe rotation. Last night we had pork tenderloin on the grill that had been marinated in some sort of coffee concoction. The marinade was boiled to make a sauce and sweet potato fries were part of the meal. I wasn't sure I'd like the sauce since I just can't hack coffee, but it just ended up tasting rich and meaty and my whole family liked it. Laurie4b Posted June 1, 2013 Share Posted June 1, 2013 When we are at the beach, I always include a couple of seafood meals, buying fresh seafood from the local fishermen's stands. Our favorite is scallops and/or shrimp with pasta. Saute scallops in a mixture of butter and olive oil and at the end add some garlic, tarragon, and lemon juice. Serve on pasta. I usually boil the shrimp, but you can saute, too. Our family loves this. It's easy and absolutely delicious. Serve with salad. We like Parmesan cheese on it. Bean burritos: I use canned black beans, rinsed. Saute peppers, onions, garlic. Add in beans to warm. Season with cumin and chili powder if desired. You make them at home, freeze them, and at the beach, all you have to do is pop them in the oven until hot. We serve them with fresh guacamole & sour cream, but they are also good plain. They are great for lunch or dinner. I have yet to have anyone not love them, lol. I've made them with corn tortillas for my gluten-free mom, and they worked beautifully. I've made them cheese-free for a dairy-free friend, too. You have a lot of freedom to tweak the recipe. I hope you enjoy them. They are a huge hit at my house. We go to the beach for a month each fall, and I usually make 80-90 for the trip, so that is about 40 person/meals as each person usually eats about two. (Teen boys might eat three or four if there aren't side dishes, lol.) I freeze them in big tupperware containers with wax paper separating the layers. They are one of my fave things to take b/c they take NO pre-planning of the meals since you don't have to thaw or whatever, and you can adjust for how many people are eating so easily, unlike a big lasagna, etc. Enjoy! You don't want to pay $3 for 12, lol. :) IME, locally the Walmart has the best and cheapest tortillas unless you have a Mexican market. Mandylubug Posted June 1, 2013 Share Posted June 1, 2013 We always try for some fresh seafood. I keep made up chicken salad and tuna salad in the fridge as well as fruit salads or jello. We also buy boxes of ice cream sandwiches, etc. and keep in the freezer. We never have those at home but rare occasions so it is nice to have a cool treat while on the beach. We also try to eat out atleast twice for lunch instead of dinner (it is cheaper and less crowded). We grill a ton of burgers, etc. for dinners on the beach as well. lavender's green Posted June 2, 2013 Share Posted June 2, 2013 This is going to sound weird, but...tomato aspic. It's very cooling, and if you pick up any local seafood you can add it to that.
