Tarts are very good with crumb crusts, so I would probably go with a cookie crust in this case. Find a tasty gluten/nut-free cookie that you like (These ones from GF on a Shoestring are very tasty http://glutenfreeonashoestring.com/nilla-wafers/ ) , put the cookies in a blender and mix in just enough melted butter to hold it together. A nice shortbread cookie would work great too.

Believe it or not the GF Bisquick from Betty Crocker makes a REALLY GOOD pie crust! We use the crust from this recipe http://www.bettycrocker.com/recipes/gluten-free-cream-cheese-pumpkin-pie/6c59f35c-2e67-4cdd-a6a6-20601e071fd0 I use dairy free margarine and it works fine. It looks a bit soggy in that pic but its never come out soggy in any pie we've made.

Are coconuts nuts? Seriously do not know this! Anyway, I like a coconut crust for tarts. http://allrecipes.co...ust/Detail.aspx

ETA: Looked it up. They are palm seeds, not tree nuts. So probably safe? Delightful with key lime and lemon meringue too... :D

LOL. She can't have coconut as it does not make the nursing baby happy. However it sounds good to me.

That sounds good, too. I wanted to do my usual shortbread but I just couldn't find a good GF/NF one. I tried one last night that tasted like cardboard.
