You set up the business, write checks to pay bills, handle orders, re-stocking, figuring sales tax, figuring profit markup, profit/loss, decide on advertising (and pay for it), deal with crises that come up and require more money than planned, etc. We did it a bit earlier than 7th grade, but it would make a fun unit study and it reinforces pre-algebra skills like decimals and percents. If you look at the "links and tips" page, you will see folks have expanded this by doing things like having the child create physical advertising flyers or learn to use a spreadsheet program. You could include learning to set up a website as well, if you wanted.
