Forget-Me-Not
. . .how dry do they need to be before I cook them? I'm attempting this today and rolled them out about as thin as I could with a rolling pin, but they don't seem to be drying very fast. The recipe I'm using said 4-5 hours. It's been almost 2 and there is no way these will be completely dry by the time I need them for my soup tonight.
Forget-Me-Not
Homemade noodles aren't dry and crunchy liked dried boxed noodles. They don't need to be super dry. They are rather doughy. They are probably fine. Oh good! Thanks Wendy!
Chris in VA
Yep--you see plenty of folks on those cooking shows making fresh pasta and just putting it in the water right away--it does cook faster then, tho, so be careful.
LMD
You only need to dry them out if you want them to keep for a while. If you want to use them straight away then go for it - they're better that way IMO.

Spy Car
I would not cook them in the soup, but rather cook them in a separate pot just before you need them (they will cook fast) and put into bowls at serving. Otherwise they will likely overcook. Be vigilant, as fresh egg noodles cook up in minutes. Bill

Forget-Me-Not
Homemade noodles? I am sooo coming over for dinner tonight! Homemade chicken noodle soup to be exact :). I even used a whole chicken and made my broth from scratch. It was pretty awesome. Even my super picky eater proclaimed that she liked it!
