Gluten Free Banana Nut Muffins. Hint 1. Keep them on the small side. I used an icecream scoop, had a bit left in the bowl after the muffin pan was full, and then added about another tbsp to each muffin. Callie Posted March 1, 2013 Share Posted March 1, 2013 I think I'll try them this weekend as I have some bananas to use. I don't have any coconut flour so will try with all almond. Or possibly whiz some unsweetened coconut in the food processor and make flour. I made the Cheddar Bay Almond Flour Bisquits last night and they were a hit. One dd said they were the best thing I made in the last month. I actually think they were tastier than a biscuit made with white flour. Also, if you use ground coconut for flour it won't be the same as reg. coconut flour as the coconut is defatted before being made into flour. justamouse- thanks for the recipe- I bet the kids would like that. (Working on making vegan gluten free.) Looking forward to trying them. I'm thinking they may not rise without the eggs? But if you're vegan, you may have worked this stuff out before?
