I have googled and found several, but I would prefer to start with one that someone can recommend. I saw one that had almond butter in it that intrigued me. Also some made with bananas. Can be any "flavor." I'm just wanting a pancake! :) Quote
Soror Posted February 2, 2013 Posted February 2, 2013 Our favorite is apple pancakes, but it is a bit different. I shred apples and then press out the juice. I then add 1 egg per 2 apples, lots of cinnamon, a bit of vanilla and almond flour to make it a good consistency and fry in coconut oil. I use a 1/4 cup measuring cup to scoop and then form into a small patty, fry on med heat. Do not put on until pan is well heated and wait a good while before trying to flip, there is an art to it. However, they are yummy and as all the juice is squeezed from the apples I think they should be pretty low in sugar. I like to top them with just cinnamon and coco oil. We used to mix coco oil and honey as well. Quote

(I'm not sure about all the paleo foods.) 3 ripe bananas, mashed 3 eggs, lightly beaten 1/2 C almond flour 1/2 tsp baking soda dash salt 1/2 tsp vanilla (opt) 1/2 C fresh or frozen berries (opt.) Mix all ingredients. Cook in butter or coconut oil on medium high heat. Flip carefully when there is a golden brown crust on the bottom. Serves 3. Quote

I tried this one yesterday with frozen blueberries & blackberries, and YUM! I cut back on the almond flour, and so the pancake was a little hard to flip. Still, it was very good (next time I'll use the whole amount). Thanks a bunch! Quote
sleeplessnights Posted February 4, 2013 Posted February 4, 2013 We made pumpkin pancakes this morning: 8 eggs 1 cup pumpkin puree 2 tbsp vanilla 3 tbsp honey 2.5 tsp cinnamon 1/2 tsp cloves 1/2 tsp allspice 3/4 tsp nutmeg 1/2 tsp baking soda 4 tbsp coconut oil They taste like little pumpkin pies.
