I am so frustrated, it's not cheap buying bulk produce but usually worth it for my large family. Would cobbler or pies be good even w/mealy fruit? Doran Posted July 26, 2008 Share Posted July 26, 2008 Try this with some of them. And, for others, I'd mix them with other fresh fruits of the season (berries, cooking apples) into a fruit crisp. Mix cut up fruit (about 8 cups total) with the juice of a fresh lemon and some sugar (1/2 - 1 cup). Pour into a baking pan. Make a crumble topping using 1 cup of all purpose flour, 1 cup sugar, 1/2 tsp. salt, 1/2 tsp. ground cinnamon, 1/4 tsp. ground nutmeg. You might bump up the cinn. and nutmeg by 1/4 tsp. each to make up for the tasteless peaches...depends on how much other fruit you mix in. Toss this in a food processor if you have one, or a large bowl. Mix or cut in 1 stick of cold cubed butter until your mix gets crumbly like cottage cheese. Then add in 1 cup of finely chopped almonds. Mix together and sprinkle over fruit. Bake at 350° for about 50 minutes. If there's any way you can buy from a farmers' market, you'll be less likely to end up with mealy fruit.
