Next Sunday I am hosting about 20 of my in-laws for brunch; this is after I host the same group + 20 extra for dinner the night before. The dinner, fortunately, is mostly catered, so I don't have to worry about that, but since people will be re-descending on my house the next morning, I am looking for some easy breakfast ideas that I can pop in the oven before people arrive and pull out in time to serve.

 

In my freezer, I already have

 

- triple berry muffins

- banana-bran muffins

 

And I will be serving juice and fruit salad.

 

Mostly I'm looking for quiche/casserole recipes that I can half pull together the night before, half finish/bake the morning of (or even freeze and bake...) My husband is not a huge egg eater, so I don't have a lot of quiche experience.

 

I'm also 37 weeks pregnant, so my energy level isn't going to be spectacular; thus tried-and-true recipes I can count on are appreciated!

If I were in your shoes (that many guests plus pregnant), I would be tempted to go to Sam's or Costco and pick up a good selection of breakfast finger-foods (mini quiches, spanikopita - surely I spelled that wrong - biscuit sandwiches, etc) PREmade, to just pop in the oven. Any time you want to spend in food prep could be spent cutting some fresh fruit to go with it.

 

That said, I will enjoy any recipes others have to share!

We have a family fav. It comes out every time there is a large group and we want to not have to be in the kitchen...Its a breakfast casserole. The great thing about this recipe is you can make it the night before then just stick it in the oven in the morning! Hot and yummy.

 

1 1/2 pounds sausage

18 eggs beaten

2 cups milk

1 tsp salt

3 cups grated cheddar cheese

2 cups Ore-ida Potatoes (hash browns or potatoes o'brien)

optional is two cups croutons ( we have family allergic to wheat, so we often skip them)

 

Brown the sausage and drain. Combine the eggs, milk and salt. Add the cheese to the eggs. Put everything in an 10 by 14 inch pan. Bake for 75 minutes, until a knife comes out clean!

 

The casserole might take longer if you have refrigerated it over night.
