If you want to slice up the loin, try that amazing recipe for easy baked pork chops - it is soooooo yummy. The Pineapple Standing rib roast recipe also works for just a regular loin. We also do a less fancy stuffed pork loin with packaged stuffing mix and a can of crab meat. Prepare the stuffing, add the crab meat to it and then stuff the pork loin. Laurie4b Posted January 17, 2013 Share Posted January 17, 2013 I cook pork loin in the oven in about 1/2 inch of water. When it's done, I shred it and make pork barbecue. We use an eastern NC vinegar sauce (mostly apple cider vinegar, with chopped onions, minced garlic, and some hot sauce or red pepper flakes), but it's good with any kind of barbecue sauce that you like.
