Once a Month (freezer) cooking menus--cheap and healthy?

We've done once a month cooking a few times. For me what worked best was not making 10 meals of chicken, 10 meals of beef, etc. Rather I stuck w/ one meat, and that was the meat that was on sale for the week. Take a look at your library - look for books on once a month cooking or freezer cooking.

 

There are also lots of things you're probably currently making where if you just double or triple the recipe you could freeze some. Make some soups that you can freeze.

She has freezer pleasers freezer menus, she has a selection of GF and Paleo. The really great thing about these menus is there is very little prep cooking done. It is all assembly (less than 90 minutes). It takes a fraction of the time for plan ahead cooking. You pull out the meal in the am, thaw it and cook it.

 

I was very convicted on a blog last week that in order to prepare dinner at home one must think about dinner before 10 AM. I have to think about it before 7.

 

I would love to find the same plan ahead stuff for lunch and breakfast.

On the www.food.com message boards there is a board dedicated to budget cooking, and one of the ongoing threads there is OAMC cooking plans that have been put together by people over there. Some of the plans are not as whole-foods as I would personally like, but there are tons of ideas there, and suggestions for how to make your plan work. Here's the thread for the OAMC plans.

You're welcome. They do use some pre-packaged items, but I figure that a freezer meal on hand is a fast food hamburger and fries we're not going to eat, so that has to be more healthy...even if there's a can of cream of mushroom soup that occasionally sneaks into our diet. :D
