Whereneverever Posted December 29, 2012 Posted December 29, 2012 So far today my two year old has had eggs, a couple of pork sausages, black beans, a rice cake, and some blackberries. He turned his nose up at carrots with pb, peas, and apples. He also shunned the corn tortilla I offered him. He also has had a glass of milk. Obviously he is getting enough protein, but what are some other easy to hold and self feed foods for a gf toddler? Veggie heavy suggestions would be great. For tonight I have planned rice, beans, taco meat, more corn tortillas, and a variety of veggies. I expect him to eat the beans, rice, and meat. Blah. Quote

My DS rejected the more typically kid-friendly carrot in favor of fresh steamed broccoli, asparagus, and green beans. Fresh sugar snap pea pods are another hit. He still prefers his carrots to be steamed rather than fresh--he's not into the crunch. Green smoothies were always a big hit with him at that age and another way to get in some veggies. I usually used yogurt, banana, frozen strawberries, cherries, or mango, a generous handful of spinach, and enough milk to make it smooth. If I had leftover pineapple chunks or apple sauce I'd throw that in too. Quote

I sometimes pureed or diced other veggies into these. He does love broccoli, he calls them little trees, lol. I should try the snap peas, that's a great idea! He doesn't like milkshakes or smoothies. Or most soups. He's very much a single ingredient dish kinda kid at the moment, although that's slowly been getting better. Quote

I have a newborn as well and baking is really hard to do right now! I'm also at a high elevation so none of the boxed mixes will work without tweaking. Are you warming the corn tortilla? They are MUCH better when warmed in a skillet. Yes, and it does help! Small pieces of potatoes, boiled or roasted. Ooh, good call. He loves sweet potatoes, too. Quote
