nmoira
Water chestnuts are great to have on hand for when you need some crunch but have no celery. Evaporated milk too. Espresso powder (great secret ingredient in baking). Vanilla extract... double strength or make your own.

beaners
I need to have different kinds of oils and vinegars. A lot of them are for ethnic cooking where I could create something edible by only using regular or cider vinegar or vegetable oil, but to actually make that specific dish I need sesame oil and black vinegar.
