Favorite breakfast casserole recipe?

Unlike most years, we will just be spending Christmas at our home this year. Since we won't be in such a rush to get somewhere else this year, I'd like to fix a special Christmas breakfast. What are your favorite breakfast casserole recipes? I'd prefer something that can be assembled the day before, refrigerated, and popped in the oven on Christmas morning.

My fave is just 12 eggs scrambled with a cup of milk, cup of shredded cheese, salt, pepper, and a handful or two of tator tots (gasp!)...they cook better in eggs than the frozen hashbrowns :) I also put in either cooked sausge and onion or chopped up ham. I let it sit overnight in the fridge, then bake at 350 for 30-40 minutes, depending on what size pan you put it in.

That's exactly what I do! We serve with fresh fruit.

 

Yum. I can't wait until Tuesday.

I'm doing a strata. I don't really have a recipe.

 

Butter a medium casserole dish

Cube a baguette of crusty bread

Saute chopped savory veggies in a bit of EVOO. I like leek, shiitake mushrooms, red bell pepper and garlic. You can add a bit of rosemary or sage or basil

Shred a cup to a cup and a half of sharp cheddar or a blend of choice

Beat half a dozen eggs in a bowl with some milk and salt and pepper.

 

Layer half the bread, half the veggies and half the cheese then repeat. cover everything with eggs. Refrigerate 8 hours or overnight. Remove dish from fridge for30 minutes while oven warms to 350. Bake strata for 35-40 minutes depending on size.

 

If you are a meat eater you can add ham, sausage, bacon or bits of pot roast if you have any on hand. Or serve meat on the side.
