Susan in TN Posted November 29, 2012 Posted November 29, 2012 I found out a couple days ago that dd10 has a Sunday School Class cookie exchange party on Saturday. She really wants to go, and if all the stars line up and dh and/or dd get home from their activities in time to babysit the littles, and we can navigate our way around the town's annual Christmas Parade which will be going on at the same time and place, and I can get back in time to leave for my job, I'd like her to be able to go. :willy_nilly: But my mind is drawing a blank on something quick and easy for her to make. She needs 3 dozen Christmas cookies/candy/treat-type things and we'll have about a 2 hour window on Friday evening to make them. We don't have a spritzer thing and I can't handle the work of roll-out/cut/decorate cookies. Any suggestions? Quote

I only roll them once in powder sugar, when they come out of the oven, not before as some recipes suggest. Ymmy. Simple and I get requests for them every year at our cookie exchange. AK_Mom4 Posted November 29, 2012 Posted November 29, 2012 For really simple sugar cookies, mix up your favorite recipe and then form the soft dough into a 3 inch diameter log. Put in the fridge for about 30 minutes so it gets firm. Slice 1/2 inch cookies from the log, sprinkle with color sugar and bake. Much easier than rolling out and you get these lovely round cookies. One year, I colored about 1/3 the dough red and the other 2/3 green. Form the smaller amount into a log about 1 inch diameter. Wrap the other color dough around it and put it in the fridge. When you bake, you get these cool looking green cookies with red centers - and virtually no work! I like this recipe because it uses confectioners (powdered) sugar instead of regular so the cookies are softer. KatieJ Posted November 29, 2012 Posted November 29, 2012 Gluten Free Peanut butter cookies have only 3 ingredients. Peanut butter, sugar ( 1 cup each) and an egg. You could add christmas M'Ms, chocolate chips, or just top with a chocolate kiss or star when they come out of the oven. Quote

LostSurprise Posted November 29, 2012 Posted November 29, 2012 Any kind of drop cookie is pretty quick, although I would mix it up one day, refrigerate, and bake the next. It makes things less hectic and they bake better. If things get really busy buy dough from the store and modify it (special chips or candies, sprinkles). Barks are easy. Buy good chocolate (white, milk, or dark). Melt and add cocoa pebbles, cornflakes, or crumbled cookies. Press in the chocolate. Add contrasting color chocolate if you like. Add some kind of flavoring (mint), candies, or other chips. Swirl. Chill at least 1 hour. Bark can be as easy (1 chocolate with 1 add in) or elaborate as you like. Oreo truffles are pretty quick and they also need an hour to chill. Quote

Ali in OR Posted November 29, 2012 Posted November 29, 2012 The Andes Mint cookies posted and discussed on the old board several years ago are now my go-to cookie for this kind of thing. While it was a big deal on this board, the cookies were unknown in these parts and were unique as well as very yummy (I don't think they are so unique anymore as I've given the recipe out a lot!). Andes Mint Cookies Andes Mints (pkg of 28)--I use half a mint on the top of each cookie, though the original recipe is 1 mint 3/4 cup butter 1 1/2 cup brown sugar 2 Tbs. water 1 pkg semisweet chocolate chips 2 large eggs 2 1/2 cups all purpose flour (whole wheat pastry flour also works, or a combo) 1 1/4 tsp baking soda In saucepan, heat and mix butter, sugar, and water. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until all chips are melted. Pour into bowl and let cool for 10 minutes. Beat in eggs at high speed. Add remaining ingredients and beat to blend. Chill dough for at least 1 hour. Line baking sheets with foil. Roll dough in 1" balls and bake at 350° for 10-12 minutes. Place an unwrapped mint (or half mint) on each cookie as you remove them from the oven. As soon as the mints have softened, spread them over the cookies (the kids like helping with this part. Make sure you unwrap all the mints you need while the cookies are in the oven so that they're ready to go). Quote
AdventureMoms Posted November 29, 2012 Posted November 29, 2012 I recommend cookie BARS. Take almost any cookie recipe. Put the batter in a cake pan, squish flat and bake. Usually for like 20 minutes. Then cut them up. SO MUCH EASIER and yummy. I almost never make regular cookies anymore because even drop cookes are a lot messier! Quote

My favorite (easy) Christmas candy is where you take a twisted pretzel and put a Rolo candy on top. Place in the oven for a few minutes and when they come out, smoosh the Rolo down into the pretzel using a pecan. Pretty, yummy, and easy! Rebel Yell Posted November 29, 2012 Posted November 29, 2012 GFS food service (like a Sam's, no membership) has the most AMAZGIN frozen unbaked cookies, and a nice 6#tub of white frostiing. SweetChild took these to youth group 7 show choir for her birthday and everybody RAVED about them. Really- for kids? Frozen/fridge dough. It's the only kind I make, even for grownups. I hope you make it to all of your events and obligations that night- sounds liek my life. Quote
