Gluten free pie crust recipe

My favorite GF pie crusts are made with crushed GF cookies. Vanilla wafers or gingersnaps make tasty crusts - just mix with butter (or some substitute).

but the problem is that you need a GF flour blend. If you have all those starches handy, that's great, but I am usually missing one or two. Cookie crusts are easier....

We started using this pie crust for pumpkin pies after we made this yummy pie which even works well for non dairy when we used coconut milk and tofutti cream cheese http://www.bettycrocker.com/recipes/cream-cheese-pumpkin-pie-gluten-free/6c59f35c-2e67-4cdd-a6a6-20601e071fd0 the crust was very good and had a bit of a sweet nutty flavor. Just a tip, the crust is a fluffy mix (I mix in kitchen aid mixer) and I skip rolling it out and just press it into a greased pan into the shape I want.
