Apple ideas?!?

We have a bag of apples sitting on the counter. They were a little soft when we got them (softer than I would've liked - I like my crunch!) and have been sitting there for about 1.5wk - maybe even 2. First of all, are they still good as long as they aren't moldy, etc?

 

Second, oldest DD wants to make something (baked apples, applesauce, etc) with them. I'm okay with that, but her cooking/baking skills are VERY limited. If nothing else, being sick has made me realize that I definitely need to work with her in the kitchen more. Anyway....what would be the easiest, but still yummy, thing for her (and hopefully the littles too) to make?

 

Just apples (sliced), butter, cinnamon, brown sugar and bake?

Peel them, cut them up, put them in the crockpot with sugar and cinnamon (and I add a dash of vanilla) and let them cook for eight hours. Your house will smell heavenly and you'll have applesauce when they're done. Smush them with a potato masher and freeze portions in zip-loc bags. Yum!!

Applesauce is really easy, especially in a crockpot. Just peel, chop, and put the apples in the crockpot with a stick of cinnamon (no water). I have an older crockpot and I cook the apples for 4 hours on high, but you might want to use a lower setting with a newer one. Stir every so often. You can blend it up at the end if you want it really smooth, but I prefer it a little chunky.

 

ETA: Oh, I see Diane beat me to it with a slightly different version. :)

Generally, better than I was. I'm down to throwing up every other day or so. I still feel miserably nauseous a good portion of the time, but at least it's a step in the right direction. I have to be careful with smells/food and can't watch commercials at all. I can only eat/drink what sounds good, but at least I'm eating/drinking. :)

Mom’s Apple Cake

6 apples, Mom uses McIntosh apples

1 tablespoon cinnamon

5 tablespoons sugar

2 3/4 cups flour, sifted

1 tablespoon baking powder

1 teaspoon salt

1 cup vegetable oil

2 cups sugar

1/4 cup orange juice

2 1/2 teaspoons vanilla

4 eggs

1 cup walnuts, chopped (optional)

Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.

Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.

Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.

This is a really good cake!! It is even better the next day (it gets more apple-y)

 

 

BTW this is someone else's recipe---so you can trust it since MY mother didn't make it up!!!
