Salsa on the tables for chip dipping or as a condiment for the taco bar? If it's on the table for dipping, a bowl per table. If it's just on the bar as a condiment, probably not nearly as much- like an ounce or two per person. We'll eat a ton if it's with chips but none of us use it as a condiment. I can't give you amounts in quarts but here are servings. 1/2 cup each rice and beans 3-4 oz meat each (cooked) Not sure what you are doing with the salsa..as condiment or for chips. For chips I would say maybe a gallon or 3. You want at least 1/4 cup each with chips. As condiment maybe 2-3 Tblsp each. Remember a buffet will require more food than served plates. Hope this helps.
