How to build a space shuttle out of food?

I need ideas for how to build a space shuttle out of food, without it all being junk food. It's for an AHG badge day and it will meet a requirement as well as being a snack. The suggestion was Twinkies for the External Tank, Piroulines for the solid Rocket boosters, Fruit roll ups cut into the shape of the shuttle for the Orbiter. What can we do to replace some of the junk? It doesn't have to be 100% healthy, just not 100% junk.

Large carrot for the solid rocket booster.

Pieces of olive for the various pieces of black trim.

Alphabet noodles to spell out words.

Maybe a peeled cucumber for the main body?

 

The kids have a book call Look A Likes that uses this concept.
