HappyGrace Posted September 23, 2012 Share Posted September 23, 2012 I have no idea what kind of cookies can freeze, and also we are on a tight budget so I can't make one with many ingredients, etc. Bonus points if it's a bar cookie or brownie or whatever-something made in a pan-so we don't have to shape the individual cookies! Belacqua Posted September 23, 2012 Share Posted September 23, 2012 Cinnamon Chunkies (could that name be any worse?) are really good and don't have too many baroque ingredients. They do use 3 eggs, but only a quarter cup of butter. I usually cut well back on the amount of sugar, as they tend to be really sweet. I have frozen them, and they've been just fine. I've made cookie doughs of different types and just rolled the raw dough into logs and frozen them. Easy to slightly defrost and then slice and bake. I've also frozen those no-bake cookies with the oats, peanut butter, cocoa, etc. and they were fantastic. Cinder Posted September 24, 2012 Share Posted September 24, 2012 Blondies 2 c packed brown sugar 2/3 c butter 2 eggs 2 tsp vanilla 2 c flour 1 tsp baking powder 1/4 tsp baking soda 1 cup semisweet chocolate chips (optional) 1 c chopped nuts (optional) Grease 13x9 baking pan. In saucepan melt butter and brown sugar together; cool slightly. (I soften the butter in the micro then mix in the brown sugar.) Stir in eggs one at a time; add vanilla. Stir in dry ingredients then chocolate/nuts. Spread in pan. Alternately, spread batter in pan then sprinkle on chocolate/nuts. Bake at 350F for 25-30 mins. I freeze these all the time and they come out fine. I think with the butter content it's better to freeze them if it will take more than a day or two to consume as they tend to get stale if left out. dbmamaz Posted September 24, 2012 Share Posted September 24, 2012 btw, i like to take cookie dough and scoop it in to mini-muffin tins and freeze the dough. then take out of the tins and put in ziplocks. take out a dozen and pop htem on a cookie sheet any time and have cookies!
