I have Cajun Style and Chicken and Apple andouille I bought because they are nitrate-free. I'm okay using the Cajun style sausage, but I don't want the entire dish to be so spicy. Thanks! Mrs Mungo Posted September 23, 2012 Share Posted September 23, 2012 (edited) I make my black beans in Cuban-ish style (I have posted the recipe here several times, I will look for it in a minute). I think more toward red beans or other "southern" beans like purple hulls when I think andouille. ETA: I dice a red onion and a bell pepper (whatever colors I have) and cook those in a little olive oil. I add the beans along with salt, pepper, oregano and a bay leaf. I let them cook together a bit, then I add white wine, chicken broth or a margarita (yes, with tequila in it). Let it simmer down for about 15 to 20 minutes, then fish out the bay leaf. Parrothead Posted September 23, 2012 Share Posted September 23, 2012 I'd cook the beans and sausage together with some onion, bell pepper and celery, salt and pepper, water to make it the consistency you desire then serve it over rice.
