Recipe needed: Andouille, black beans, rice

I am not really looking for anything Cajun -- more garlic, onion, maybe some salsa?

 

Any ideas? I have Cajun Style and Chicken and Apple andouille I bought because they are nitrate-free. I'm okay using the Cajun style sausage, but I don't want the entire dish to be so spicy.

I make my black beans in Cuban-ish style (I have posted the recipe here several times, I will look for it in a minute). I think more toward red beans or other "southern" beans like purple hulls when I think andouille.

 

ETA:

I dice a red onion and a bell pepper (whatever colors I have) and cook those in a little olive oil. I add the beans along with salt, pepper, oregano and a bay leaf. I let them cook together a bit, then I add white wine, chicken broth or a margarita (yes, with tequila in it). Let it simmer down for about 15 to 20 minutes, then fish out the bay leaf.
