I just copied it out of a library cookbook and I can't even remember which one. :( Here it is, though: Turkey Spinach Mini-Loaves 1 T EVOO 1 Med Red Onion (finely chopped) 1 clove garlic (finely chopped) 1.5 lbs ground turkey 1/2 c. instant mashed potatoes 1 box frozen spinach (10 oz) thawed and squeezed dry 1 lg egg white 1 t. dried oregano 1/4 t. ground chile (I use 2 shakes chilli powder) 1 t. salt 1/8 t. ground pepper 2 lg. Roma tomatoes, thinly sliced 1. Preheat oven to 350. Line jelly roll pan w/foil. 2. In a med skillet, heat the olive oil over med-high heat. Sautee onion and garlic 5 min. 3. In a mixing bowl, combine turkey, onion mixture, spinach, potatoes, egg white, oregano, chilli powder, salt and pepper. Blend. Shape into 4" X 2" X 1" loaves 2" apart. Cover w/foil. 4. Bake for 30 minutes. Uncover and arrange 3 tomato slices in an overlapping row on top of each loaf. Bake until 165 degrees internal temp (about 15 minutes longer.) Let the loaves sit for another 10 minutes or so. 5. Serve with tomato or spaghetti sauce. Serves 4 ETA: Of course, now that I've typed it all out, I found the recipe online! It has ground beef and pork as well as sautéed (in butter!) red onion, yellow onion, red & green peppers, celery, carrots, garlic, and shallots. They are diced up very tiny and lend such a moistness and such an interesting flavor. I serve it with shallot gravy. Quote

My oldest DD lists meatloaf as one of her favorite foods. :) I will say that not all meatloaves are the same though and I have definitely had some that made me go :ack2: Quote

~Tara~ Posted September 19, 2012 Posted September 19, 2012 I love it but I am guessing I would be picky about it. I don't recall ever eating meatloaf out anywhere, but I love the way I make it. For example I don't like big chunks for cooked onions in things. I grate it. Yep, this is me. I like *my* meatloaf. But then again, I'm pretty much that way with everything 'home cooked'. I can eat a steak or pizza out, but 'home cooked' foods...I really only like mine. I'm not even too eager about someone else's spaghetti, which seems simple enough. :~p Hub isn't a *huge* fan, but he likes my meatloaf. Not too eager to eat anyone else's. We also would require it to be gf now though, which I've not done yet. Oh, wait, yes I did...I used oats instead of crackers/breadcrumbs :) Quote

Donna Posted September 19, 2012 Posted September 19, 2012 My family will eat my meatloaf or my mother's. I am hesitant to eat the meatloaf of others I don't know well. Don't know why. I don't like to eat meatballs made by people when I don't know what they put in them either. Quote
