My kids loved the book on learning science through picture books. I just recently purchased some more for science experiments and poems/rhymes about science. I second these, especially the Let's Read and Find Out Science. We like the First Kingfisher Animal Encyclopedia as far as encylopedias go, and Joe Kaufman's vintage science books are great - we own "How Does It Work? How Does It Go?" and "The Human Body".
