whitestavern Posted September 7, 2012 Share Posted September 7, 2012 From these boards: Honey Baked Lentils 1 cup lentils (any kind) 2 cups water 2 cloves minced garlic 2 tsp ground or fresh ginger 2 Tbsp olive oil 2 Tbsp tamari or soy sauce 2 Tbsp honey 1 small onion, chopped salt and pepper to taste Preheat oven to 350 degrees. Combine all ingredients and bake for 45-60 minutes. We eat it plain but I believe some serve it over rice. Almost any recipe for lentil soup is yummy. I can't find the link, but the way I've been making it - 1 c. lentils. Boil about 10 min until softened 1 can tomato sauce 1-2 tbsp. grated fresh ginger 1-2 tbsp. minced garlic salt 1/2 tsp cayenne pepper (more to taste) 1 c. water. 4 tbsp butter Throw all that in together and simmer til thick. Smash some of the lentils on the side of the pan to help thicken. Right before serving add 1/3 c. heavy cream and serve over rice. I could eat this all day. In fact, I made it for lunch yesterday and will have some for breakfast in a few minutes. I found French lentils at the bulk store and they keep their shape better than the green lentils at the grocery store. The red lentils cook down to mush, which isn't my favorite texture. I did make curried red lentils last weekend, but my house smelled so bad afterwards I'm not sure I'll make them again. Do a search for lentil recipes here - there's a plethora of choices. kubiac Posted September 7, 2012 Share Posted September 7, 2012 Here's a recipe for Peasant Soup I got from a friend/pseudo-relative: 1 tsp. turmeric 1 cup cilantro 1 cup parsley or spinach 1/4 cup mint 1/4 cup dill 1 can garbanzo beans 1 can kidney beans 1 bag black lentils (Trader Joe's doesn't carry this anymore - Whole Foods' 365 Brand does) 2 cloves garlic (or more) 1 tsp salt and pepper 1 onion diced 1 box chicken broth Saute garlic and onion until lightly browned add all beans (drain slightly) cook for 20 minutes covered on medium-low add all greens and spices cover with chicken broth (about 3/4 box) cover and simmer for at least an hour Save the rest of the broth to add each time you warm up a serving or else it will be too solid.
