Cindy in WA Posted July 9, 2008 Posted July 9, 2008 This is my family's favorite: 1 16 oz package rotini noodles 1 12 oz package frozen California blend veges (carrots, broccoli, cauliflower) - thawed and chopped 1 can olives - chopped handful of turkey pepperoni - chopped good handful cheddar or mozzarella cheese - cubed For the dressing, we really like Bernsteins Cheese Fantastico Light. Has a great flavor. Other Italian would be fine though. Quote

(dry) macaroni, cook and drain 2 chopped tomatoes (can add other veggies - black olives are great!) 4-8 oz. swiss cheese, cubed about 1/2 red onion, thinly sliced or chopped 1-2 c. seasoned croutons (they absorb the dressing and add flavor) dressing: 1/2 c. veg oil 1/4 c. cider vinegar 1 t. salt 1 t. oregano whisk dressing and pour over pasta, etc. Stir to combine. best if it sits in fridge for 1 hour before serving (flavors meld). I keep the dressing proportions, but often adjust other ingredients and amounts, depending on what I have on hand. This is the basic recipe. HTH, Cindy Quote

People in our family have variations, but this is the original. Some leave out the olives or onions and some add cucumbers. Paula Quote
Jumping In Puddles Posted July 9, 2008 Posted July 9, 2008 1 lb orzo pasta, cooked in salt water olive oil (about 1/2 cup) Juice and rind from 1 lemon kalamata (or other greek olive) chopped Fresh oregano, chopped Salt and pepper to taste 1 cup crumbled feta cheese toss and enjoy cold or warm! I made it with pasta, Italian dressing, pepperonis, black olives, peas and shredded parmesan. And oh, man! It's good! I had to make enough for 20 fam-damily members for our reunion this weekend. Off to Galveston tomorrow to place my butt here... Quote
