I have several, because I am, flat out, a recipe junkie, but the two I go to most often are Rachel Ray's 30 Minute Veggie Meals (this is great because there is no nutritional info anywhere in the book:D) and Good Housekeeping Vegetarian Meals (this one is basic, quick and uses common pantry items - warning, though, the recipes occasionally need a little doctoring by way of spices, imo, which is pretty easy to do). Another one I really like is The Complete Italian Vegetarian Cookbook by Jack Bishop. In the Rachel Ray book, I've made nearly everything in it over the years and never had a dud.

 

Some other books/mags/sites I like are Weight Watchers and Cooking Light. Although not strictly vegetarian, these two companies seem to offer more meatless options to cut calories. I just sub the low fat or processed ingredients w/the real thing.

 

Oh, and also, totally free, is Allrecipes.com. You can just choose vegetarian meals and go from there. You can print out your favorites and create your own cookbook.

The majority of my cookbooks are completely vegetarian or vegan, but since I got this one about a year ago, I've used it almost exclusively. If you just want a few vegetarian or vegan recipes, it may not be for you, but if you are looking to move toward a complete vegan diet, this may be just the one.
