Sharing an awesome method of baking chicken

I tried this today and it was so easy and so delicious, that I wanted to share. It makes the chicken moist and tender and flavored, just like the rotisserie chicken from the store. Once the baking hour was up, I put the chicken breasts and juices into my crockpot on low for an hour to keep warm until dh and dd got home. Oh my, everybody loved it.

 

6 chicken breasts , with bone and skin

½ cup butter , melted

1 ½-3 teaspoons Season-All salt (I use McCormick's)

Directions:

 

1.Preheat oven to 400°F.

 

2.Spray a shallow baking dish with non-stick cooking spray.

 

3.Rinse chicken breast under cool running water.

 

4.Pat chicken dry with paper towels.

 

5.Place chicken in dish.

 

6.Brush the melted butter over the chicken, using all the butter.

 

7.Sprinkle with seasoned salt.

 

8.Bake for 50-60 minutes or until cooked through. Avoid overcooking.

Why, how did you know? I was telling little Gretel just yesterday that if she didn't hurry up with that room cleaning, I had a tasty little recipe that I was really anxious to try...:sneaky2:

This could be applied to a whole chicken as well, right? I have 2 of them in my deep freezer just waiting to be baked. I've never made one before though.

 

 

Yes, a whole chicken takes longer to cook, though. Sprinkle the inside with seasoned salt as well and baste with the cooking juices about half way through.

Uncovered so the skin gets crispy.

 

I have been baking chicken this way for years, didn't know it was a recipe. It's just what I do. :001_smile:

 

Yeah I wouldn't call it a recipe just the standard way to bake chicken. Get a chicken, rub with fat and season. Roast chicken recipes are just variations on the fat and seasonings used.

 

Tip for whole chickens. To get it to cook faster just spatchcock it.
