Harriet Vane
I had two Filipina roommates in college. Their moms used to make us the most scrumptious pancit. I have fallen out of touch with them, but would really like to make pancit tomorrow. Anyone have a good, really authentic recipe? Thanks! myfunnybunch
My friend's husband is Filipino. She gave me this recipe. She said it was the closest she could find to what her sisters-in-law made. It's delicious. We also made lumpia to go with it. Cat
Jean in Newcastle
Dh is Filipino. There are different kinds of pancit. Some I like, and some I don't. The recipe above is one I like.:001_smile:

missmoe
The above recipe looks good, but we make it with egg noodles not rice noodles. I think its the Chinese in us! And we had a bit of fish sauce to ours as well.

I also add sliced fresh green beans or snow peas to the veggies.
