We're having canned salmon made into patties, plus some kind of potatoes (probably white potatoes sliced, seasoned, and baked) and some other veggie. We just had Pioneer Woman's Spicy Beans using the pinto beans from my pantry! I added a leftover ham spiral "bone" with meat (from my deep freezer) and tweaked with her recipe in the crock pot... but it was good! Enjoyed it with sour cream, shredded cheese and homemade cornbread too. Yum. Everyone's dinner sounds wonderful- and I don't think many of them would pass muster for a preschooler's lunch. They need a serving of dairy, two of fruit /veggie, a meat or meat substitute, and a bread (or maybe any starch). Mine won't pass- no dairy and only one veggie. I tasted some on Friday there and it was wonderful. It was from France and 13.99 a pound. I didn't think the kids would go for it..so I didn't get it.
