Truscifi Posted February 5, 2012 Share Posted February 5, 2012 Baked eggplant. Cut the eggplant in half, score it and brush lightly with olive oil. Season with salt and pepper. Baked for 15 min. While it is baking, chop a tomato (and onion, garlic, or whatever else you like). Mix this with 2 tbsp breadcrumbs, 2 tbsp grated parm (optional), salt, pepper, and italian seasonings to taste. Top the eggplant with the tomato topping and bake an additional 15 min. Yum! This is great with chicken breast or steak. Quote Link to comment Share on other sites More sharing options...
TheReader Posted February 5, 2012 Share Posted February 5, 2012 I usually slice it into roughly quarter inch rounds, then maybe quarter those circles. Put in a pan of olive oil, some basil & oregano. Add in some halved or quartered grape tomatoes (or cherry tomatoes). You can add zucchini as well, &/or some sweet onion. Saute until it's the texture you like. Very yummy.
