I'm cooking for "lower" carb diets. I need some variety in our vegetables. The pureed acorn squash last night was ok. It's organized like a reference book, so if I have, say, beets on hand, I go to the beets section and find several ways of using them. Everything I've cooked from this book has been delicious.
