We just had the most delicious salad for lunch (recipe)...

Ok, I think my ds & I are seriously hooked on this salad. Easy & delicious. We will be making this one often (but quadrupling – or more – the recipe, lol).

 

(I did not put the garlic in ours.)

Avocado w/ Bell Pepper & Tomatoes

Serves 1

 

  • 1 teaspoon extra-virgin olive oil
  • Juice of 1/2 lime
  • 1 small clove garlic, minced
  • Pinch cayenne
  • Coarse salt
  • 1 ripe avocado, halved and seeded
  • 1/2 yellow bell pepper, stem and seeds removed, diced
  • 6 cherry tomatoes, halved
  • 1 scallion, thinly sliced
  • 1 tablespoon freshly chopped cilantro, plus leaves for garnish

  1. In a small bowl, whisk together oil, lime juice, garlic, and cayenne. Season with salt.
  2. Scoop out meat from avocado halves and chop. Transfer to a bowl and add bell pepper, tomatoes, scallion, and cilantro.
  3. Drizzle with dressing and season with salt. Gently stir to combine. Spoon mixture into avocado shells. Garnish with cilantro leaves.

Here is my new favorite:

 

Romaine

chicken

blue cheese crumbles

apples

grapes

cranberrys

 

doesn't need dressing

 

 

 

 

This is almost identical to a salad at Wendy's. It doesn't include grapes, but has roasted, sweet pecans and a pomegranate vinegrette dressing. I leave off the blue cheese because of a dairy issue, but I love this salad so much.
