mommy25
Hello, I was recently diagnosed with a gluten sensitivity. I am on a quest to learn to make good, gluten free bread. I have some experience with making bread and have my own grain mill and mixer. But, I am having trouble figuring out where to buy GF flours, like sorghum and millet flour, in bulk (and cheaply). I think I can buy in whole grain form so I can used my grain mill -- but it can be in flour form too. Can't find any food co-ops in my area either.... Any suggestions? Any good (and successful) bread recipes you can share? Thanks!
JumpyTheFrog
Millet isn't really gluten-free. I've been GF for years and just learned this. Gluten is the collective name for two proteins, gliadin and something else I can't remember. Millet has gliadin in it, so it seems like something GF people should avoid.
